Kastro is on Ampelonon, the vineyard road that runs down from Pissouri village to the bay. The house keeps no website of its own beyond a Facebook page, so nothing is written here about the kitchen. What the hours show is a restaurant run the traditional way, in two sittings rather than straight through: midday to half past three, then a break, then six to nine in the evening. That is the Cypriot pattern and it means the afternoon is genuinely closed — arriving at half past four will find the door shut, which catches out visitors used to all-day service on the resort strips. It is closed on Thursday. Every other day of the week runs the same two sittings, including Sunday. The evening service ends at nine, which is early for the eastern Mediterranean and early for Cyprus in particular. A table at half past seven is a safer plan than one at half past eight. Pissouri is split between the old village on the Cape Aspro ridge and Pissouri Bay below, a crescent of sand and pebble under white cliffs that holds a Blue Flag for water quality. Ampelonon connects the two, so this address is on the way between them — walkable downhill from the village and a stiff climb back, which is why most people drive it. Konoba Lanterna is a small tavern on Kralja Nikole in the old centre of Podgorica. A konoba is a particular thing along this coast and its hinterland — the traditional Adriatic eating house, historically the room where wine was kept — and the word sets the expectation better than the English "restaurant" would. The house describes itself plainly and does not oversell: a small and pretty konoba in the middle of the city, an interior of stone and wood, attentive staff and traditional cooking. Those three together are what a konoba is meant to be, and the room is honest about being small. Two practical things. Tables can be reserved through the restaurant's own site, which matters in a room of this size. And the kitchen delivers food and drink to any address in the Podgorica area, which is unusual for a traditional house and useful if you are staying outside the centre. It opens every day from midday to eleven at night, straight through, with no closing day. Kralja Nikole is one of the main streets of the newer town, running south-west from the centre and walkable from the old quarter across the Morača. It is named after Nikola I, the last king of Montenegro, and it is one of the arteries the city grew along after the war, so the address puts the konoba among shops and offices rather than in the tourist streets — which is generally where the cooking is better. Konoba Ribar - "the fisherman's tavern" - sits on the coast road between Morinj and Perast, with its terrace built out over the water of the inner bay and the two islands of Perast straight ahead. It is the plain, good kind of Boka seafood place: black risotto, grilled fish by weight, prawns, fried squid, breaded mussels, octopus, a fish soup to start, and a few pasta and vegetarian plates for the rest of the table. The kitchen is open every day from midday to ten in the evening, which makes it easy to fit around a boat trip or a swim from the rocks below. From Morinj it is a few minutes by car or a walk along the shore. A table at the edge of the terrace is worth asking for.

L'AperiPizza is an Italian pizzeria in the Centro Comercial Plaza on Calle Punta Pesebre in Costa Calma, in the municipality of Pájara on Fuerteventura. Its own line for what it does is the best summary anyone could write: quality Italian pizza, because life is too short to eat a bad one. The numbers behind that are unusually good. Ninety-eight per cent of two hundred and forty-seven people recommend it, and the price band is the lowest of the three the island's restaurants are sorted into — a combination that is rare anywhere and rarer on a resort coast. There is seating outdoors and pizza can be collected at the kerb. The hours want reading before you set out. It is closed on Monday and on Tuesday, both. From Wednesday to Sunday it opens at one in the afternoon and runs to half past ten at night without a break. Two closing days in a row is unusual here and catches people out at the start of a week's holiday. Costa Calma sits at the neck of the Jandía peninsula in the south of Fuerteventura, where the island narrows to a few kilometres between two coasts. The Centro Comercial Plaza is one of the small shopping centres set back from the beach road, so this is an address to walk to from the town rather than one you pass on the front — worth knowing, because it is easy to miss from the FV-2. LIVIN'ITALY sits under the railway arches at Granary Wharf, on the canal side of Leeds station, and is three things in one space: a bar, an Italian restaurant and a deli. The arches give the room its shape, and the house makes a point of the fact that it is Italy lived rather than staged. The family business began in Milan in the 1980s, with the founders' parents and what they describe as a love of good food and honest hospitality; the Leeds house opened in 2012. It has been consistently named among the best Italian restaurants in Britain since. The four words the family uses for what it does — passion, tradition, integrity, simplicity — are worth repeating because the menu follows them: ingredients chosen for where they come from, dishes meant to be shared. Because the deli and the bar sit alongside the kitchen, the same address covers a morning coffee and a Negroni after midnight. La Corderie sits on the Cité d'Alet peninsula in Saint-Servan, on the far side of the harbour from the walled town, with a terrace that looks across the estuary of the Rance to Dinard. The same family has run it for more than thirty-five years, and the kitchen has stayed with what the boats bring in: sole and bass from the bay, scallops in season, lobster from the tank, a fish soup that regulars order without opening the menu. It is a quiet, unhurried place, better for a long lunch with the view than for a quick bite. Booking is wise for the terrace on a sunny day.

La Palta stands in Bilegno, a hamlet so small that the restaurant describes itself as a hidden gem behind uneven walls — set among gentle hills, kitchen gardens and old houses in the province of Piacenza. The building gives nothing away from the road, which is part of how the place presents itself. The cooking is ambitious rather than rustic, and the house says so in its own words: the eyes come before the nose and the palate. Unexpected combinations are the method. Two dishes stand for the range — tortelli con la coda, the tailed parcels that are the signature pasta of Piacenza and are folded here in the traditional way, and black ravioli served in an exotic broth that belongs to no local tradition at all. The kitchen is run by a female chef, and the house describes eating here as travelling between the smells of home and inspirations from far away. La Parisienne is the Gambian bakery-café that has been baking in the French way since 1993, and this is its Bijilo branch at the Brusubi turntable, a few minutes from the Senegambia strip and the Bijilo beach hotels. The counter holds croissants, pains au chocolat, tarts and celebration cakes; the kitchen behind it serves breakfast, sandwiches, shawarma, pizzas and a menu of everyday meals through the day, with proper coffee and fresh juices. The room is fully air-conditioned, which on a hot afternoon is half the point, and there are tables outside for the cooler hours. It opens in the morning and stays open late, so it works as much for a first coffee as for a late dessert after a beach day.

Las Olas is a fish restaurant on the Carrer de Ramon de Montcada, on the Costa de la Calma side of Santa Ponsa. Its own line for what it does is four words long and says everything: from the sea to the plate. The house publishes its menu as a document in four languages — Spanish, English, German and French — which is unusual and useful. It means you can read what is being served before you sit down rather than working it out from a board, and seven pages of it suggests a kitchen with more than a resort card. One thing to plan around: it is closed on Mondays. The rest of the week it opens at half past twelve and runs through to midnight without a break, which covers a late lunch, an early dinner and a late one at the same address. Tables are booked through the restaurant's own link page. Costa de la Calma adjoins Santa Ponsa to the west and is the quieter half of the same stretch of coast — residential rather than resort, a few minutes' walk from the beach and away from the main avenue. The name means calm coast and it is not marketing: the bay here is sheltered from the tramuntana, the north wind that closes the beaches on the other side of the island, which is why this corner of Mallorca fills up first in spring and empties last in autumn. Laynes is a coffee house on New Station Street, immediately outside Leeds railway station, and it opened in 2011 into a city that had almost nothing of the kind. Fifteen years later it is the address people give when asked where the coffee is, and the restaurant is direct about what it set out to do: give Leeds a place that paid absolute attention to the quality of two ingredients, coffee and possibly milk, in a room where somebody would explain them. It has grown past that. There is a kitchen now, and the house claims some of the best breakfast and lunch in the city centre — a claim it can make because most of its competition is a chain. There is a Laynes bakery, and beans are sold through an online shop for anyone who wants to take the coffee home. Opening is early and long: half past seven in the morning to seven at night on weekdays, from eight on Saturday, and a shorter Sunday from nine to four. Tables can be booked, which for a coffee shop is unusual and says something about how busy it gets. New Station Street runs from the station entrance into the city, so this is the first door you pass arriving in Leeds by train and the last one leaving. Le Globe-Trotter is a small restaurant in the heart of the Cité d'Alet, between the Solidor tower and the Bas-Sablons beach, and its name is the menu: dishes gathered from journeys, cooked with what the Breton markets offer. A Thai curry can follow a Breton fish tartare, a tagine a plate of grilled prawns, and the card changes often enough that regulars find something new each visit. At midday there are set lunch formulas between about €15 and €22, which makes it one of the better-value sit-down lunches on this side of the harbour. The terrace is sheltered and there is room for families; evenings are calmer than in the walled town.

Le Proposte is a family restaurant in the hamlet of Corano, in Borgonovo Val Tidone, in the hills of the province of Piacenza. Its beginning is unusual and the family tells it plainly: twenty-five years ago Danila and Luigi, with their daughter Manuela, bought a farmhouse in a panoramic position meaning it to be a second home. Cooking took over. In the year 2000 the house opened as a restaurant, and it has been run by the family ever since. The kitchen is traditional and the work is done on the premises: cured meats are aged in the restaurant's own cellars, the pasta is made in the house, and the ingredients are handled daily rather than bought prepared. In this part of Emilia that is not a marketing line — salumi and hand-made pasta are what the province is known for, and doing both in-house is the difference between a country restaurant and a country restaurant worth driving to. The dining room seats about forty. In summer lunch and dinner are served on the panoramic terrace, which is the reason the farmhouse was bought in the first place. It is closed on Monday and Tuesday. From Wednesday to Saturday it serves lunch from half past twelve to two and dinner from eight to eleven; on Sunday the evening ends an hour earlier. Booking is sensible in a room of forty seats. Little Efes is the takeaway in Minsterley for the evening when nobody wants to cook: Turkish grill and kebabs from the charcoal, doner and shish in bread or on a plate with rice and salad, plus burgers, pizzas and chips for the rest of the table. Portions are generous and the meat is cooked to order rather than kept warm. It is a small place, mostly collection, with a couple of seats while you wait.
