Pod Volat stands on Trg Vojvode Bećira Osmanagića in Stara Varoš, the old quarter of Podgorica. The name means under the arch, and it describes where the place is: this is the Ottoman-era part of the Montenegrin capital, the few streets that survived the bombing of the Second World War, gathered around the Sahat Kula clock tower and the Osmanagić mosque. The opening hours say more about the house than anything else could. It is open from seven in the morning until midnight, every single day of the week, with no closing day and no break between services. A kitchen kept running for seventeen hours a day is serving a local trade rather than a visiting one — breakfast, a working lunch, an evening, and whatever comes after — and in a capital city of two hundred thousand people that is a particular kind of institution. Stara Varoš lies on the left bank of the Ribnica, where it meets the Morača, and is reached on foot from the centre in a few minutes over the old Adži-paša bridge. Princi is a Milanese bakery, and the shop on Via Speronari is a few steps from the Duomo. The house has been baking since 1986 under the name L'Artigiano del Pane — the craftsman of bread — and it is one of the small number of Milanese food names that became international without leaving: there are Princi bakeries in the United States, Japan, China and Kuwait, all of them selling what the company calls the spirit of Milan. What is sold is bread, pizza, focaccia and pastries, baked through the day rather than in one morning batch, which is why the counter looks different at nine in the morning and at five in the afternoon. Focaccia and pizza al taglio are sold by weight and eaten standing or taken away, and that is how most of the queue uses the place: this is a bakery, not a restaurant, and there is no table service. It opens every day from half past seven in the morning until half past seven in the evening — long hours by Milanese standards, and unusual in covering Sunday. Pérola do Oceano is a family restaurant in the village of Água de Pau, a few minutes up the hill from Ribeira Chã, where the owner cooks and the dining room is papered with postcards, photographs and notes left by guests from all over the world - the decoration has grown for years and is half the reason people come back. The food is Azorean home cooking, unfussy and generous: fried chicharros, the small mackerel of the islands, baked octopus, crab and fried prawns to start, a grilled beef tenderloin for those who want meat, and for dessert bean pudding or the house ice cream. Prices are village prices. It suits a family evening more than a formal one.

Queijadas do Morgado on the Rua do Penedo in Vila Franca do Campo makes one thing, and it is the thing this town is known for across the whole archipelago: the queijada da Vila. The house calls them the fantastic queijadas of Vila Franca do Campo, the only ones — and it is not really an exaggeration, because the recipe belongs to this town. A queijada da Vila is a small baked tart of egg, sugar and milk in a thin pastry case, wrapped in paper and sold by the dozen. Despite the name — queijo is cheese — there is no cheese in it. They are eaten as a mid-morning thing with coffee and they are what Azoreans carry back to family on the mainland, which is why the shop is set up for taking away rather than sitting down. It opens every day from nine in the morning to seven in the evening, with no closing day, which for an island bakery is unusual and useful — Sunday included. Vila Franca do Campo was the first capital of São Miguel until an earthquake and landslide destroyed it in 1522. Rapa Nui is a surf bar on Punta los Molinillos in Costa Calma, and it is more than a place to eat: alongside the food and drink it runs a surf school and Segway excursions, and publishes a weekly programme of what is on. That combination is the point of it — the bar is the meeting place for the school rather than a restaurant that happens to have boards outside. It is open from nine in the morning until midnight, every day of the week, which covers breakfast before a lesson and a drink long after one. The setting explains the business. Costa Calma sits on the Jandía peninsula in the far south of Fuerteventura, on the Playa de Sotavento — a stretch of white sand and shallow lagoon several kilometres long. The trade winds blow across it almost without pause, which is why this coast is one of the best-known windsurfing and kitesurfing places in Europe and why a surf school sits on the beach road rather than in the town. Rapa Nui is the Polynesian name for Easter Island, which is an odd flag to plant in the Atlantic and tells you the register the bar is going for. The weekly programme is the thing to look at before arriving: what happens here changes by the day, and turning up on the wrong one means a quiet bar rather than the place the reviews describe. Basalt is the fish restaurant of Middelburg, and it says so without hedging. It stands in the Sint Janstraat in the historic centre, close to the old fish market, and the whole kitchen is built around fish, wine and what the Dutch call the Burgundian way of eating — slowly, and at length. The offer changes, which is the important detail: what is served depends on what came in from the market that day rather than on a fixed card. In Zeeland that is a real distinction. The province sits between the North Sea and the delta, and mussels, oysters and flatfish come out of water a few kilometres from the table. A restaurant that rewrites its list around the catch is buying differently from one that does not. The room is described by the house as domestic in feel rather than formal, and there is a wine list built to go with the fish. It serves every day, lunch from midday to four and dinner from five to eleven, with a short break between. Booking is the sensible course in a small centre-of-town dining room. The hours are the useful part. It opens at half past ten in the morning and closes at half past ten at night, every day of the week, without a closing day and without the afternoon break that most Spanish kitchens take. Twelve hours straight through covers a late breakfast, a lunch at three, and a dinner — and on this coast the middle of that is the hard slot to fill. Roque del Morro is one of the streets running through the town between the FV-2 coast road and the beach. Costa Calma is laid out as a resort rather than as a village: it grew from nothing in the 1980s along the Playa de Sotavento, and the streets are named after the rocks and points of the peninsula. The town sits at the narrowest part of Fuerteventura, where the island is barely five kilometres across, with the Atlantic on both sides and the wind coming over from the east almost every day. That wind is the reason the beach here is famous and the reason an inland street can be a good deal more comfortable to eat in than the front, particularly in the afternoon. O Silva has been cooking on the Rua Direita de Cima in Ribeira Grande since 1979 — more than forty years of the same kitchen, run on family recipes handed down through the generations. Regional character, tradition and freshness are the three things the house names for itself, in that order. It is unusually specific about what it is known for, which saves a visitor guessing. The famous dish is the Bife à Silva. Then there is arroz de cherne com miolo de camarão — wreckfish rice with shrimp — the espetada de cherne com camarão, cavaco, and filetes de abrótea, fillets of forkbeard. Cherne and abrótea are deep-water fish of these islands and are not things you will have eaten at home. Food is also prepared to take away, which the house calls flavours at home. It is closed on Monday. Tuesday to Saturday it serves lunch from midday to three and dinner from a quarter to seven until ten; on Sunday there is lunch only. The Rua Direita de Cima runs through the old centre of Ribeira Grande, the island's second town, on the north coast about forty minutes from Ribeira Chã. The drive crosses the middle of São Miguel over the ridge, past the Lagoa do Fogo, which makes the journey there worth as much as the meal at the end of it. This is the restaurant of the Associação Agrícola de São Miguel — the island's farmers' association — at Campo do Santana. That ownership is the whole point of the place: the kitchen belongs to the people who raise the animals, and the house states plainly that its dishes are made with Azorean products. São Miguel is cattle country. The island is green the year round, the herds stand out in the open in every month, and Azorean beef and cheese are what the archipelago sends to the mainland. A restaurant run by the farmers' association is as close to the source as eating here gets, and it takes part in the regional programme that supports restaurants buying local produce. Some unusually practical detail is published: there are high chairs for babies and stain remover on hand, the technical sheets for every dish on the menu can be consulted on request — which for anyone with an allergy is worth more than a reassurance — and prices include VAT. Ristorante Galleria sits inside the Galleria Vittorio Emanuele II, the glass-roofed arcade that runs between the Duomo and La Scala. That address is the whole of its character: you eat under the iron and glass of the 1870s, in what is arguably the most photographed interior space in Milan, with the mosaic floor and the passing crowd as the setting. One practical point matters more than anything else here, and the restaurant states it plainly on its own site: the only way to reach them is by e-mail, to info@ristorantegalleria.it, and a booking counts only once they have confirmed it by e-mail in return. They do not use WhatsApp or any messaging service. Anyone booking through a third party claiming otherwise is not booking this restaurant. The kitchen is open long hours — from ten in the morning until midnight, every day of the week — so it covers a mid-morning coffee, lunch, an afternoon in the arcade and a late dinner after the opera. Tables stand out in the Galleria itself. The location makes it one of the easiest addresses in Milan to find and one of the hardest to get a table at on short notice: the Duomo metro stop empties directly into the arcade. Ristorante Mont Néry is the restaurant of the Villa Fridau residence in Gressoney-Saint-Jean. Its name goes back to the Locanda Mont Néry, which the family's great-uncles Erwin and Pina Monterin ran in the village in the 1950s. Today Marysa looks after the dining room and chef Boris Melon runs the kitchen. The cooking is Aosta Valley and Piedmontese, built on produce from close by: the valley's cured meats and cheeses, fresh pasta made in the house with a choice of sauces, and game served with polenta. The ice cream is homemade, in flavors that follow the season, and Boris and Marysa are glad to suggest a bottle from the wine list.

Ristoro Colle Betta sits at 2,727 meters on the Bettaforca pass, right where the Sant'Anna-Bettaforca chairlift arrives, in the middle of the Monterosa ski area between the Gressoney valley and the Val d'Ayas. In winter skiers stop on the snow terrace facing the Monte Rosa massif; in summer hikers come up on the trail from Stafal or ride the lifts via Sant'Anna. The hut is large and spread over two floors. The menu mixes Aosta Valley and Piedmontese dishes with pizza, sandwiches and toasts for a quick stop between runs, the cellar holds a good range of wines, and the bar serves beer, coffee and hot chocolate. It is open for as long as the lifts are running.

Ristoro Sitten is a mountain refuge at 2,300 metres above Staffal, in the Monterosa Ski area, with Monte Rosa filling the view from the terrace. In winter it is reached on skis or with the Sant'Anna cable car from Staffal; in summer the cable car and a 4x4 shuttle bring walkers up, or it is a hike. Run by the Comola family's company, it works as two places in one. At lunchtime it is a self-service with quick dishes, hot sandwiches and Aosta Valley plates for skiers and hikers; in the evening it becomes a restaurant with regional cooking, and on Saturdays in season a high-altitude dinner with a snowcat ride up after the lifts have closed. There is a wood-fired hot tub outside for those staying the night, and beds for anyone who wants to be first on the slopes.

Riva Blu stands on Park Row in the middle of Leeds and cooks southern Italian — which is a narrower thing than Italian, and the reason the room is worth singling out. The south is the half of Italy that gave the world tomato, chilli, oregano and durum wheat pasta, and a kitchen that commits to it eats differently from one working through the whole country. It functions as a restaurant and a bar together rather than a restaurant with a bar attached, and takes private events and celebrations in its own rooms. Gift cards are sold through the restaurant's site, and tables are booked the same way. The hours are generous by the standards of a British city centre. Midday to eleven at night from Sunday to Thursday, and midday to midnight on Friday and Saturday — one unbroken service, so a late lunch at four or an early dinner at six are both possible without waiting for a kitchen to reopen. Park Row runs through the financial quarter between the Town Hall and the river, a few minutes on foot from Leeds station and from the Victorian arcades. If you are staying anywhere central this is walking distance, and it is one of the streets that stays busy into the evening after the offices empty. Edgewater runs along Biscayne Bay between downtown Miami and the Design District. It is one of the fastest-changing parts of the city, largely residential towers now, and the ground-floor businesses along Biscayne Boulevard are what give the neighbourhood its daytime life.
