The Stables Inn has stood at Hopesgate since 1680, built as a drovers' inn for the farmers walking their stock from Wales to Shrewsbury market, and it still feels like one: low beams, a fire in the bar, the pub dog somewhere near it. It sits high in the Shropshire Hills, so the beer garden looks out over the Stiperstones side of the county. The kitchen cooks fresh, locally sourced food - a short main menu from Wednesday to Saturday and a Sunday roast that regulars book ahead for - and the pumps carry Shropshire real ales. There are rooms and a shepherd's hut for anyone who does not want to drive back down the lane. Opening days are limited and can change with the season, so a phone call before setting out is sensible.

The Crown & Sceptre is Minsterley's village pub, family-run, with one big room that serves as lounge and bar, a separate dining room and two open fires that earn their keep in winter. Part of the old wattle-and-daub frame is left visible behind perspex, a reminder of how long the building has been here. The food is homemade pub cooking - fish and chips, gammon, pies - with a Sunday lunch that fills the dining room, so it is worth booking. One changing real ale in summer and two in winter, often from Wye Valley. There is a lawn and patio at the back, a bowling green, live music once a month, and dogs and children are welcome, children until 8 pm on Friday and Saturday.

Little Efes is the takeaway in Minsterley for the evening when nobody wants to cook: Turkish grill and kebabs from the charcoal, doner and shish in bread or on a plate with rice and salad, plus burgers, pizzas and chips for the rest of the table. Portions are generous and the meat is cooked to order rather than kept warm. It is a small place, mostly collection, with a couple of seats while you wait. Cash only - there is no card machine - so bring notes. For a cottage stay in the Hope Valley it is the nearest hot meal after the pubs have stopped serving food.

De Pannekoekenbakker in Oostkapelle is a pancake house on the Domburgseweg, on the island of Walcheren in Zeeland. The Dutch pannenkoek is a meal rather than a breakfast dish — a plate-sized pancake served either sweet or savoury — and this is a house that does nothing else, which is worth knowing before you arrive expecting a menu. The restaurant sets itself up as the stop after a day outside: a walk along the sea, a bicycle ride through the dunes, an afternoon out. That is a fair description of Walcheren, where the coast, the woods and the villages sit within a few kilometres of one another, and it is why the kitchen runs straight through the day rather than in two sittings. There is a children's club, so this is a room built for families rather than one that tolerates them, and gift vouchers and arranged packages are sold through the restaurant's own site. The house recommends booking, which on a wet Sunday in the holiday season is not a formality. It is open seven days a week, from half past eleven in the morning until half past eight in the evening — unusually long for the Dutch coast, where many kitchens close between lunch and dinner. De Gecroonde Liefde is on the Nieuwendijk in the old harbour quarter of Vlissingen, a few steps from the boulevard, and it has been run by the same two owners, Ronny Kers and Raymond de Jonge, since 2002. The name is old Dutch for "crowned love", taken from the house. By day it is a place for coffee and lunch - sandwiches, soups, a good steak tartare - and from Friday evening and at the weekend a restaurant with a French-international menu, fish from the Oosterschelde and meat from the region. The room is warm and unfussy, with a bar for a glass of wine, a gin and tonic or a cocktail before or instead of dinner. From Oost-Souburg it is a ten-minute drive or a bike ride along the canal.

HoneyPie is a lunchroom on Achter de Houttuinen in Middelburg, and it wears its subject openly: the house motto is that a balanced diet is a piece of cake in each hand. Cake is the point here, and lunch is served around it rather than the other way round. Beyond the daytime menu the kitchen does three things worth knowing about in advance. There is a high tea, which is booked rather than walked into. There is a picnic, packed to be taken away — a sensible idea in a province where the coast and the dunes are twenty minutes from the front door. And there is cake to go, sold whole or by the slice, which is the reason to stop here on the way to somewhere else. It opens from nine in the morning until five in the afternoon, Tuesday to Sunday. Monday it is closed. Those are daytime hours in the strict sense: this is not a dinner restaurant, and arriving at seven in the evening will find it shut. De Herberg stands on the Pottenmarkt in the middle of Middelburg and describes itself as your living room in the heart of the town — informal, open to everyone, and open from ten in the morning until midnight, seven days a week. The house line is "just like home, but with better food and drinks", which is at least honest about what it is aiming at. The single long opening covers everything in one room: a coffee with cake in the morning, a full lunch, and in the evening brasserie dishes from the barbecue. The menu deliberately sets classics beside things that are not — North Sea bouillabaisse next to Korean sticky ribs, house-made falafel and a proper set of vegan dishes rather than one token plate. There is a terrace, and a list of special beers to sit outside with, which on the Pottenmarkt means watching one of the busiest squares in Zeeland go past. Because it never closes between services, this is the practical answer to the awkward hours — a late lunch at three, or something to eat at ten at night, both of which are hard to find in a Dutch provincial town. Basalt is the fish restaurant of Middelburg, and it says so without hedging. It stands in the Sint Janstraat in the historic centre, close to the old fish market, and the whole kitchen is built around fish, wine and what the Dutch call the Burgundian way of eating — slowly, and at length. The offer changes, which is the important detail: what is served depends on what came in from the market that day rather than on a fixed card. In Zeeland that is a real distinction. The province sits between the North Sea and the delta, and mussels, oysters and flatfish come out of water a few kilometres from the table. A restaurant that rewrites its list around the catch is buying differently from one that does not. The room is described by the house as domestic in feel rather than formal, and there is a wine list built to go with the fish. Bakkerij Sonnemans is a pastry bakery in Burgh-Haamstede, a dune village on the island of Schouwen-Duiveland in Zeeland. The family has run it for four generations, which in a village of this size makes the bakery a fixed point rather than a business. What is unusual is what grew around it. The same family runs a small hotel behind the bakery, on the Achterweg, and the hotel is also a museum: walking in from the bakery's terrace takes you into rooms furnished as they once were. It is described by the owners as a boutique hotel and museum in one, and it can be visited over a cup of coffee rather than only as a guest. The opening hours are short and want reading carefully, because they changed with the season. From September the bakery opens Friday from eight to five, Saturday from eight to four and Sunday from eight to five. Monday to Thursday it is closed altogether. Anyone driving over for a Tuesday morning coffee will find the door shut. Burgh-Haamstede sits behind the dunes at the western end of Schouwen-Duiveland, north of Walcheren across the Oosterschelde. LIVIN'ITALY sits under the railway arches at Granary Wharf, on the canal side of Leeds station, and is three things in one space: a bar, an Italian restaurant and a deli. The arches give the room its shape, and the house makes a point of the fact that it is Italy lived rather than staged. The family business began in Milan in the 1980s, with the founders' parents and what they describe as a love of good food and honest hospitality; the Leeds house opened in 2012. Tharavadu is a Kerala restaurant on Mill Hill in the centre of Leeds, and the distinction matters: Kerala is the far south-west coast of India, and its cooking — coconut, curry leaf, tamarind, a great deal of fish — is not the north Indian repertoire that most British curry houses serve. The house motto is pure devotion to quality and authenticity, and the kitchen holds to the one region. It opened in June 2014 and the recognition followed quickly. In 2015 it was named best Indian restaurant in Leeds at the Oliver Awards and placed in TripAdvisor's top ten Indian restaurants in the United Kingdom. In 2016 it appeared in the Michelin Restaurant Guide and in Harden's, and took the Oliver Award again. The restaurant describes itself as part of a wave of serious kitchens that changed how Leeds thinks about Asian food, which is a fair claim for a room that arrived before most of them. Laynes is a coffee house on New Station Street, immediately outside Leeds railway station, and it opened in 2011 into a city that had almost nothing of the kind. Fifteen years later it is the address people give when asked where the coffee is, and the restaurant is direct about what it set out to do: give Leeds a place that paid absolute attention to the quality of two ingredients, coffee and possibly milk, in a room where somebody would explain them. It has grown past that. There is a kitchen now, and the house claims some of the best breakfast and lunch in the city centre — a claim it can make because most of its competition is a chain. There is a Laynes bakery, and beans are sold through an online shop for anyone who wants to take the coffee home. Opening is early and long: half past seven in the morning to seven at night on weekdays, from eight on Saturday, and a shorter Sunday from nine to four. Riva Blu stands on Park Row in the middle of Leeds and cooks southern Italian — which is a narrower thing than Italian, and the reason the room is worth singling out. The south is the half of Italy that gave the world tomato, chilli, oregano and durum wheat pasta, and a kitchen that commits to it eats differently from one working through the whole country. It functions as a restaurant and a bar together rather than a restaurant with a bar attached, and takes private events and celebrations in its own rooms. Sukhothai is a Thai restaurant on South Parade in central Leeds, and it has been open since 2002 — long enough in a city centre to have outlasted most of what opened around it. The house describes what it does as Thai fine dining, which here means the cooking treated as a kitchen discipline rather than as a takeaway menu. The name is the old capital of Siam, the kingdom that preceded modern Thailand, and it sets the register the restaurant is aiming for. Beyond the ordinary card there is private dining and, unusually for the cuisine, a Thai bottomless brunch — a British format applied to a Thai kitchen, which tells you the room is not run as a museum piece. Six by Nico on East Parade does one thing, and it does it differently every six weeks. The whole offer is a six-course tasting menu built around a single theme — a place, a concept, an idea — and when the six weeks are up the menu is thrown away and a new one replaces it. Recent themes have included Circus and New York. That format is the reason to know about it in advance rather than to walk past it. There is no permanent card to fall back on: what you eat depends entirely on when you come, and a dish you liked will not be there next time. It also means the room rewards a second visit in a way an ordinary restaurant does not, and the house publishes what is cooking now and what is coming next on its own site. Booking is effectively required, and vouchers are sold and redeemed against the experience — the house asks that a voucher balance be checked before arrival rather than at the table. Groups and private events are taken. It is open every day from midday to eleven at night.
