Six by Nico on East Parade does one thing, and it does it differently every six weeks. The whole offer is a six-course tasting menu built around a single theme — a place, a concept, an idea — and when the six weeks are up the menu is thrown away and a new one replaces it. Recent themes have included Circus and New York. That format is the reason to know about it in advance rather than to walk past it. There is no permanent card to fall back on: what you eat depends entirely on when you come, and a dish you liked will not be there next time. It also means the room rewards a second visit in a way an ordinary restaurant does not, and the house publishes what is cooking now and what is coming next on its own site. Booking is effectively required, and vouchers are sold and redeemed against the experience — the house asks that a voucher balance be checked before arrival rather than at the table. Soun is a café and restaurant on the Bertil Harding Highway, the coast road that runs along the Gambian Atlantic shore. It describes what it does as breakfast, brunch and beyond — Afro-fusion cooking with a nostalgic Gambian flair. The name carries the whole idea and the house explains it. Soun comes from the Wolof word souna, a variety of local millet, and it honours Joyce's grandmother, Kumba Soun Sanneh, who was born in the souna harvest season. A restaurant named after a grain and a grandmother is telling you where its cooking is rooted before you read a single dish. My Gambia Magazine described the room as a fusion of flavours with a welcoming atmosphere, warm lights, soft music and staff dressed to match the decor — every part of it, they wrote, reflecting Joyce's commitment. Spago is a bar and restaurant on Radoja Dakića in Podgorica, and it comes from the same house as Zheng-he, the Chinese restaurant in the city — both founded, as the owners put it, out of a love of hospitality, food and tradition. Knowing that the two are related explains the standard of service the place is run to. The house makes two claims for itself and both are checkable when you arrive. The first is the site: an exclusive and unusually quiet location, which in a capital city is worth something and is not the same as being central. The second is the wine. Spago keeps a wide Italian list and says so as its main argument — every great wine has a story behind it, and they expect one of them to be waiting for you. It opens at eight in the morning and runs to midnight, every day of the week without a closing day. That span makes it a coffee stop, a lunch and a late dinner at the same address, which is how a bar and restaurant together are meant to work. Steak House San Borondón stands on Calle L.T.U. in Costa Calma. It keeps no website, so what it serves beyond the steak in its name is not described here. The name is worth knowing, because it is not a family name. San Borondón is the phantom eighth island of the Canaries — a landmass that generations of islanders reported seeing on the western horizon, that appeared on Spanish charts for three centuries, and that several expeditions sailed out to find and never did. It is now understood to have been a mirage. Naming a restaurant after it is a local joke of a particular kind. The hours differ at the weekend, which is the practical thing to note. Monday to Saturday it opens at one in the afternoon and runs to eleven at night, straight through. On Sunday it opens only at five in the evening and closes at half past ten — so there is no Sunday lunch here. A steak house is a reasonable thing to find here rather than an incongruous one. Fuerteventura has almost no agriculture — the island is dry enough that goats are most of what it raises — so meat is shipped in on the same boats as everything else, and a house that makes beef its subject is making a choice rather than using what is to hand. Steak House by Michael is in Pissouri village, up the hill from the bay, and since it opened in June 2017 it has been the place people drive to for a proper steak: prime cuts including USDA beef, cooked to order on the grill with a choice of sauces, and a wine list that goes well beyond the usual village selection. There is seafood, pasta and a few vegetarian plates for those who do not want meat, and the vegetables and herbs come from the family's own garden. Michael runs the room himself and the kitchen is in the hands of a trained chef; the place was renovated recently and is a step up from the tavernas without being stiff. The outside bar opens at lunchtime for a drink or a lighter plate; dinner is in the evening, Monday to Saturday. Booking is wise at the weekend.

The house describes what it does as Thai fine dining, which here means the cooking treated as a kitchen discipline rather than as a takeaway menu. The name is the old capital of Siam, the kingdom that preceded modern Thailand, and it sets the register the restaurant is aiming for. Beyond the ordinary card there is private dining and, unusually for the cuisine, a Thai bottomless brunch — a British format applied to a Thai kitchen, which tells you the room is not run as a museum piece. The hours want attention because they change across the week. Monday to Friday it is an evening restaurant only, from five to ten, and to eleven on Friday. Tharavadu is a Kerala restaurant on Mill Hill in the centre of Leeds, and the distinction matters: Kerala is the far south-west coast of India, and its cooking — coconut, curry leaf, tamarind, a great deal of fish — is not the north Indian repertoire that most British curry houses serve. The house motto is pure devotion to quality and authenticity, and the kitchen holds to the one region. It opened in June 2014 and the recognition followed quickly. In 2015 it was named best Indian restaurant in Leeds at the Oliver Awards and placed in TripAdvisor's top ten Indian restaurants in the United Kingdom. In 2016 it appeared in the Michelin Restaurant Guide and in Harden's, and took the Oliver Award again. The restaurant describes itself as part of a wave of serious kitchens that changed how Leeds thinks about Asian food, which is a fair claim for a room that arrived before most of them. Service runs Monday to Friday in two sittings, lunch from midday to two and dinner from five to ten. On Saturday it stays open straight through from midday to ten. On Sunday it is closed altogether, which catches people out. Its website has been taken down — the page that remains says it will come back — so what follows is what can be checked, and nothing about the kitchen, which we have no source for. The opening pattern is the informative part. It is closed on Monday. From Tuesday to Saturday it opens only in the evening, from half past five to ten. And on Sunday it opens only at midday, from twelve to half past three, and not at all in the evening. A Sunday-lunch-only house that shuts on Monday is a particular institution, and in a Cypriot hill village with a long-settled British population it is a recognisable one. The practical consequence: if you want to eat here on a Sunday evening or a Monday, you cannot, and a Sunday table is the one worth booking ahead. The Stables Inn has stood at Hopesgate since 1680, built as a drovers' inn for the farmers walking their stock from Wales to Shrewsbury market, and it still feels like one: low beams, a fire in the bar, the pub dog somewhere near it. It sits high in the Shropshire Hills, so the beer garden looks out over the Stiperstones side of the county. The kitchen cooks fresh, locally sourced food - a short main menu from Wednesday to Saturday and a Sunday roast that regulars book ahead for - and the pumps carry Shropshire real ales. There are rooms and a shepherd's hut for anyone who does not want to drive back down the lane. Opening days are limited and can change with the season, so a phone call before setting out is sensible.

Verige 65 stands on the water at Kostanjica, on the coast road through the Bay of Kotor. The name is the address: Verige is the strait, the narrowest point of the whole bay, where the two sides come within a few hundred metres of one another. The word means chains, after the chain that was once drawn across the water to keep ships out. The restaurant sits on that narrows and describes itself as a place of unique energy. It is arranged for more than dinner. Alongside the kitchen the house takes events and weddings, which in this setting is the obvious use for a terrace over the water, and it keeps a gallery of its own on the site. The hours are long and identical every day: eight in the morning until midnight, with no break and no closing day.
