LammButtRind

LammButtRind is the restaurant at Seehotel Töpferhaus, beside the Bistensee in Alt Duvenstedt. Its Nordic cooking takes its starting point from the surrounding fields, woods, hedgerows and coast. The kitchen bakes its own bread, makes stocks, pickles and ferments ingredients, and changes the main menu with the seasons. Lamb, flatfish and beef provide the restaurant's name and remain recurring themes, with their accompaniments changing through the year. On the autumn menu, lamb comes with lentils, pumpkin and labneh, plaice with beans, pear and bacon, and braised ox cheek with potato and celery mash. Vegetables receive equally detailed treatment: semolina dumplings with chanterelles and a savoy cabbage roll filled with spelt, apple and pumpkin are among the meatless main courses. Desserts draw on familiar northern ingredients, including a layered apple and dark bread pudding. Inside, two dining wings use wood, natural colors and candlelit tables, with some seats looking toward the water. Six small heated glass houses on the lake terrace offer a separate setting for up to four guests each. A fireplace in the lobby provides another place for a drink before or after eating. Sous chef Marta selects the wines, including bottles from the Douro vineyard she owns with her sisters. Children have a small menu and high chairs. Vegan meals and allergies can be discussed when reserving. Larger parties can arrange a private room, and guests bringing a dog should mention it when booking.
