Le Channel

Le Channel is the Crespo family's restaurant on boulevard de la Résistance in Calais Nord, opposite the marina and close to Place d'Armes. It is a separate address from the cultural venue that shares its name elsewhere in the city. Here, the family brings together French cooking and an extensive interest in wine, with the dining room designed to make both part of the experience. José, Monique, Arnaud and Jérôme Crespo are named in the house's account of its family tradition. The brothers' kitchen experience includes work at the Montalembert and with Joël Robuchon, and the restaurant describes its cooking as a meeting of classical foundations and new ideas. A renovation placed the kitchen prominently opposite the entrance, equipped with induction cooking, a charcoal oven and a plancha. Those different methods give the cooks several ways to develop a dish rather than relying on a single signature technique. Wine is woven into the room itself. A glass panel near the entrance offers a glimpse into the cellar, while a wine library in the small lounge extends the theme above ground. The house lists more than twelve hundred wine references and also describes an exhibition room used for discovering and tasting wines. This makes the restaurant especially interesting for diners who want to give the wine selection as much thought as the food. Its marina setting adds a connection to Calais without making the meal dependent on a beach visit.
